How to freeze it
- Wash and peel the carrots, then cut them into slices, chunks, or sticks.
- Blanch the carrots in boiling water for 2 to 3 minutes to stop enzyme activity.
- Immediately plunge the carrots into an ice water bath to cool them down completely.
- Drain the carrots thoroughly and spread them on a baking sheet to flash freeze for 1 hour.
- Transfer the frozen carrots into airtight freezer bags or containers, removing as much air as possible.

Thawing and using it
The carrots will be soft and limp after thawing, making them unsuitable for raw salads. For best results, thaw them in the refrigerator or add them directly to soups, stews, and stir-fries while still frozen.
